Given the harmful effects of high nitrate in vegetables, especially leaf vegetables on human health in recent years much attention has been subject to extensive research in this area is ongoing. Many leafy vegetables Such as lettuce, endive and Cabbage have high nitrates that are stored in their stems and petioles. Given that the edible part of Chicory were production dark environment using storage roots by applying nutrient solution containing nitrate use recently done. Tested in a randomized complete block design with three levels of nitrate ( 5,10,15 mM) and zero (control) with three different levels of root diameter on the shoulders of large roots (4 to 5 cm), moderate (3 to 4 cm), low (2 to 3 cm) in a factorial combination of agricultural research station khalat pushan, Faculty of Agriculture, Tabriz University, was conducted. Regarding the effect of root size and nitrate on nitrate concentration of chicons as well as the results showed that That with increasing root size and nitrate levels the nitrate concentration chicons was also significantly increased so that the highest nitrate concentrations in large roots (diameter 4-5 cm shoulder) and 15 mM nitrate was obtained. Considering that density and number of branches chicons one of the most important factors of product quality and lower marketable yields And a much smaller number of branches chicons production quality and lower marketable yields also will be higher. Therefore the use of greater roots with appropriate levels of nitratecan cause elevated quality of production.
